Phil gets mad, because with a healthy raise a Q 10 is not a good hand. Most of the time it is going against Ace something and the Q 10 is not a strong hand. Then the person with the Q 10 hits on the flop and that makes him mad.
Pros like to play with odds when dealing with a raise. I dont know the official odds, but a q 10 has probably a 20% chance of winning. 1 out of 5. A pro will look at that and see what his odds are to call the bet is he is a dog to win the hand. To Phil, one should fold that hand.
I also think Phil likes to blow things out of porportion, so he knows what kind of hand he is facing. If a guy plays a bad hand against him and beats him and he goes off, that person is unlikely to do that again, so he doesnt get yelled at for being a donkey on live TV. This will help Phil in having a good understanding of what type of hand someone will have.
